The pastry course “èCucina Pastry Academy” offers a cycle of 8 lessons to learn the basics of pastry step by step with a professional approach. In addition to the recipes of a “pastry chef” who works in a starred restaurant, you will also learn the reasons for chemistry in pastry, the perfect recipes of the classic pastry you are looking for!

An in-depth study in 8 lessons on pastry under the guidance of pastry chef Ivan Bonamini starting from Saturday 3 October 2020 at èCucina in Via XX Settembre 90, the pastry will have no more secrets!

Pastry has its own rules and techniques, you need to start from the basics of pastry! Starting on the right foot is easier under the guidance of an expert chef who works in the starred restaurant Il Desco, with the knowledge of chemistry and the correct procedures for each preparation.

The course is organized in 8 lessons and is practical, the participants will try their hand at basic pastry preparations under the guidance of Ivan Bonamini

The pastry course for educational needs has theoretical moments, in which the pastry chef will explain the behavior of certain doughs and with this information he will help you not to make mistakes then at home, and moments in which he himself will make the dough: only in this so the student will have the necessary concentration to understand the consistencies and the salient moments and then reproduce them at home.

The essential manual steps for the success, for example, of shortcrust pastry at home, will instead be performed directly by you: the use of the sac sa poche, the printing of the cream puffs, the assembly of the various sweets etc.

We recommend carrying out the recipes during the week in order to expose any critical issues and doubts encountered to the pastry chef.

We met and appreciated Ivan during the Le Stelle cooking class at èCucina where he was invited to illustrate and have the students prepare three dishes from the Menu of Il Desco, a Veronese restaurant with 1 Michelin Star, of which Ivan is the sous-chef. The chef has a well-rounded experience in the field of cuisine that ranges from traditional cuisine to pastry, to starred cuisine. During the courses Ivan is precise, available, generous in his explanations and in revealing the tricks to make top dishes even at home. His positive clarity makes him a special teacher for both professionals and amateurs.
