Do you love canederli, the legendary South Tyrolean dish, nutritious and tasty? So why not explore all their possibilities from dumpling to red to sweet dumpling!
Are dumplings too soft? Or are they too compact? Or would you like to explore new versions and new dumpling recipes?
Do you know that traditional dishes with basic ingredients like bread and milk lend themselves well to the invention in the kitchen?
In this course we will start from the Specknoedel tradition, the dumpling with speck, and then overturn a bit the traditional recipe and create a more summery Mediterranean dumpling, or a dumpling with red turnip that lends itself to a nice presentation, to land the sweet dumpling ricotta and spiced bread.

The teacher
Chef Luca Magagnotti is a teacher of the Junior Chef Academy course, the children’s cooking academy and has been a patient, precise and highly competent teacher of all classical and international cooking techniques, a baggage that only a few chefs really have!
Chef Luca has been a restaurant owner and has worked in the best restaurants in Verona, he currently teaches at the Stimmatini Institute and at èCucina.
Competence and sweetness make him the teacher we all love!
