The fried pizza montanara is a Neapolitan delicacy that is proposed in a new course of èCucina with stone-ground flour and long leavening.

And why not add the delicious fried gnocco from Emilia too!

Their fragrance lends itself well to the study of gourmet topping with which to indulge. From the dough to frying, the course is entirely practical

Notions on: flour, leavening and frying method

Topping:

Tuna sauce and anchovies from the Cantabrian Sea

Pecorino, basil pesto with cashew nuts and stracciatella drops, confit tomatoes

Babaganush, smoked sword, caramelized onion

The course may undergo changes in the program in relation to seasonality.

We will teach it to you Cucina Alessandro Laferza, our expert expert in leavening and mother yeast, trained at the prestigious Castalimenti di Bresci, Monday, April 15th at 7.00 pm, in Via XX Settembre, 90.

What will I learn?

During the cooking course, the chef will guide you immediately in practice and you will prepare all the dough with him. Then you will learn:

information on the right flours to use

information on how to knead and how to leivitate things

information on cooking in home ovens

you will have the written recipes of what has been done

I prepared your dough

You will learn the various forms

You will learn the steaming of dough

How do I register?

I pay the same evening? No, for you to find the course well prepared, with the weighed ingredients and all that is needed in order and èCucina must know exactly the number of participants in time. You can pre-register and then pay within one week of the course. So you will have your place secured!

The course costs € 70 if you  èCucina’s card (€ 6 six-month registration card or € 10 the annual card, to be done in the evening of the course)
