Are you passionate about Japanese cuisine? A fan of kitchens of other cultures? Or a restaurateur always looking for new stimuli? If you want to learn the art of Japanese cooking at èCucina, a two-cooking classe that can be attended individually with the chef Andrea Berti and his project Kukunoki
The Japanese Cooking Course is a course that will teach you basic techniques and recipes to prepare dishes of a culinary tradition that has been recognized World Heritage Site by UNESCO.
When and where?
The course takes place at the kitchen in Via XX Settembre, 90 in Verona
Thursday 21 February at 7.30 pm basics and techniques
Friday, March 1 at 19.30 practice and recipes
the two lessons can be attended individually, in both lessons there will be some cutting technique and recipes will be performed.
What will you learn?
A step by step guide to the principles that define Japanese cuisine in its facets
with the aim of understanding the fundamentals and then applying them.
Introduction to the Japanese culinary culture, discovering the similarities with ours
Discipline as a fundamental requirement and the value of repetitive exercise as a method for achieving perfection
Tools: Japanese knives compared to Western knives: differences, how they work and a Japanese knife is made.
Cut: how and why. Practice
What is UMAMI?
Introduction to Dashi and the different ways of making it happen. Understanding the Umami through our kitchen. Importance of fresh water
We do Dashi in all ways
Understanding the basic ingredients: Soy, Sake and Mirin. Use of sugar and fat.

I pay the same evening? No, for you to find the course well prepared, with the weighed ingredients and all that is needed in order and èCucina must know exactly the number of participants in time. You can pre-register and then pay within ten days of the course. So you will have your place secured!
