Maestro Rolando Morandin returns to èCucina with a new course!

Do you want to learn how to make candied fruit and vegetables from one of the true masters of Panettone? For the first time in Verona it will be possible for you.

Yes, because inCucina we invited, in a full-immersion course of 2 days, the great maestro Morandin not to make comlombe or panettone but for his unique specialty: Candied fuits and vegetables

After the excitement of last Christmas, with so much dough, so many fascinating tales of the Master, so much information and advice of the generous Rolando at great request also the course on candying.

Because we realized at éCucina that there are teachers and there are Masters, Rolando Morandin is one of these!

The previous course was also attended by confectioners and chefs who have exposed their questions and doubts about their doughs to the Master and have admired the dexterity of the Master!

PANETTONE:

Sweet prince of the Italian tradition produced with the recipe of Rolando Morandin, high quality ingredients and sourdough. During the course, in addition to panettone, a leavened brioche will be produced with a mixed-leavened bonsemi in order to keep the yeast active even after the Christmas season.

Who is the Master

Rolando Morandin is one of the great masters of Italian pastry. A professional life spent in his pastry shop in Saint-Vincent, now left to the sure driving of his son Mauro, classifying one of the Best Panettone of 2018. A second career among students, professionals, classrooms and laboratories to transmit all his knowledge without saving energy, good words, suggestions and advice.

What you learn

The course consists of a theoretical part about the yeast technique, how to keep it as you use it in the dough and a practical part in which each student will prepare their own panettone. You will learn:     

  • the dough with a professional kneader and a planetary mixer at home     
  • candied, chocolate    
  •  mother yeast, refreshments, how to manage it, suggestions and advice    
  •  the pirlatura     
  • cooking     
  • conservation

Saturday April  13 and  sunday april 14 rfrom 9.00 to 18.00, in Via XX Settembre, 90.

 How do I register?

I pay the same evening? No, for you to find the course well prepared, with the weighed ingredients and all that is needed in order and èCucina must know exactly the number of participants in time. You can pre-register and then pay within ten days of the course. So you will have your place secured! Remember that the single work course is limited to 9 places, book early!

The course costs € 290 for two days full-immersion course, lunch and coffee break included
