Do you enjoy cakes and pastries but would you like to perfect yourself in the art of chocolate and pralines with a real pastry chef? Or do you want to learn the basics of chocolate tempering?

The basic course on Tempering chocolate & éCucina pralines of a lesson gives you the basis to make your own chocolates or chocolate subjects, because, to start off on the right foot, you need the technical knowledge to understand how to treat chocolate. You will make the tempering of chocolate yourself!

What is chocolate tempering? why is it necessary for pralines and chocolates?

The tempering is a heat treatment to which chocolate is subjected, which we already buy it tempered, which consists, to put it simply, in dissolving the chocolate correctly, respecting temperatures, phases and mechanical work. If we do not temper the chocolate, the chocolates will be stained and hard. The tempering allows you to get very shiny chocolates with the right consistency!

An in-depth pastry lesson  under the guidance of pastry chef Emanuele Olivieri, on Monday 21 October 2019 at èCucina in Via XX Settembre 90, the pastry shop will have no more secrets!

What you learn

to temper dark and white chocolate
to create chocolates
to create pralines, filled chocolates

The pastry chef will make the chocolate temper in pairs or individually, so that everyone learns the necessary technique.

You will go home with your box of chocolates!

The pastry course teacher

Emanuele Olivieri, a young emerging pastry chef, has worked for the renowned pastry shop “Roma”, now he takes care of the Donatelli 3011 sweets menu. A member of the Cuochi Scaligeri Association, he won a silver medal at the 2019 Italian Cuisine Championships. Loves  to make student work and bring them to create classic and modern sweets.

Objective: pastry can be learned by everyone, there are no secrets!

I pay the same evening? No, to make you find the course well prepared, with the weighed ingredients and everything you need, èCucina must know exactly the number of participants in time. You can pre-register and then pay within ten days of the course. So you will have your place secured! Remember that the course in a single work station is limited to 9 places, book early!
